Blanch spinach in boiling water for 2 minutes, then shock in ice water. Squeeze out excess water and puree until smooth.

Cut chicken into bite-sized pieces. Finely chop onion, tomatoes, ginger, garlic, and green chilies.

Heat ghee or oil in a large pan over medium heat. Add cumin seeds and let them splutter.

Add chopped onion and sauté until golden brown.

Add ginger, garlic, and green chilies. Sauté for 1-2 minutes until fragrant.

Add chopped tomatoes and cook until softened and oil starts to separate.

Stir in turmeric powder, coriander powder, and garam masala. Cook for 1 minute.
