Bring a large pot of salted water to a boil for the pasta.

While water heats, mince the garlic. Dice the pancetta.

In a large skillet, add the diced pancetta and cook over medium heat until crispy. Remove pancetta with a slotted spoon and set aside, leaving the rendered fat in the skillet.

Add the extra virgin olive oil to the skillet with the pancetta fat. Add the minced garlic and red chili flakes and sauté until fragrant, about 1 minute.
