A classic Croatian strudel filled with grated pumpkin, sugar, cinnamon, and sometimes walnuts, baked until golden brown and flaky.

- All-purpose flour500 g

- Vegetable oil100 ml
- Sugar200 g
- Cinnamon2 tsp
- Lemon zest1
- Walnuts (optional)100 g
- Salt1 tsp
- Water150 ml
- Butter (for brushing)50 g

Peel, seed, and grate the pumpkin. Mix with sugar, cinnamon, lemon zest, and optional walnuts. Let it sit for 30 minutes.

For the dough: Mix flour, eggs, oil, salt, and water to form a smooth, elastic dough. Knead for 10 minutes.

Divide the dough into 2-3 portions. Roll out each portion very thinly on a floured surface, stretching it as much as possible without tearing.

Spread the pumpkin filling evenly over the stretched dough, leaving a small border.

Carefully roll up the dough with the filling, like a strudel.

Place the strudels on a baking sheet lined with parchment paper. Brush the tops with melted butter.

Bake in a preheated oven at 180°C (350°F) for 40-50 minutes, or until golden brown and crispy.

Let cool slightly, then dust with powdered sugar before slicing and serving.
