- Vanilla extract1 teaspoon

Prepare the palacsinta batter: Whisk flour, 1 tbsp sugar, and salt. In another bowl, whisk eggs and milk. Combine wet and dry ingredients until smooth. Let rest for 10 minutes.

Heat a lightly oiled pan and cook thin palacsinta as described in the classic recipe. Set aside.

Prepare the filling: In a bowl, mash the túrós with 3-4 tbsp sugar, egg yolk, vanilla extract, and raisins (if using) until well combined.

Spread a generous amount of the cheese filling onto each palacsinta.
