- Vegetable oil for fryingas needed

Activate yeast in warm milk with a pinch of sugar.

In a large bowl, whisk eggs and remaining sugar until pale.

Add the activated yeast mixture, lemon zest, and rum to the egg mixture.

Gradually add flour and salt, mixing until a smooth, thick batter forms.

Cover the bowl and let the batter rise in a warm place for about 30 minutes.

Heat vegetable oil in a deep pot over medium heat.

Carefully drop spoonfuls of batter into the hot oil, frying until golden brown on all sides.

Remove fritule with a slotted spoon and drain on paper towels.
