
Traditional Medenjaci (Croatian Honey Cookies)

Classic Medenjaci are soft, spiced honey cookies, often decorated with royal icing. They are a staple during holidays and celebrations in Croatia.

- Ground cinnamon1 tsp

- Lemon zest1 tsp
- Salt1 pinch
- Powdered sugar (for icing)200g
- Egg white (for icing)1

Gently warm honey and butter in a saucepan until butter is melted. Remove from heat and stir in sugar until dissolved. Let cool slightly.

In a large bowl, whisk together flour, baking soda, cinnamon, cloves, nutmeg, and salt.

In a separate bowl, whisk eggs and lemon zest. Gradually add the egg mixture to the cooled honey mixture.

Pour the wet ingredients into the dry ingredients and mix until a cohesive dough forms. Knead briefly on a floured surface.

Wrap the dough in plastic wrap and refrigerate for at least 1 hour, or until firm.

Preheat oven to 180°C (350°F). Line baking sheets with parchment paper.

Roll out the dough to about 0.5 cm thickness. Cut out shapes using cookie cutters (traditional shapes are often round or heart-shaped).

Place cookies on the prepared baking sheets and bake for 8-12 minutes, or until lightly golden brown.

Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

For the icing: Whisk powdered sugar with egg white until smooth and thick. Add a tiny bit of water if too thick. Decorate cooled cookies.
