- Butter, unsalted, softened125g
- Sugar100g
- Eggs1 large
- Ground black pepper1-2 tsp
- Lemon zest1 tsp
- Baking soda1/4 tsp
- Saltpinch

Cream together softened butter and sugar until light and fluffy.

Beat in the egg and lemon zest.

In a separate bowl, whisk together flour, baking soda, salt, and ground black pepper.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form a dough.

Wrap the dough in plastic wrap and chill for at least 30 minutes.

Preheat oven to 180°C (350°F). Line baking sheets with parchment paper.

Roll out the dough on a lightly floured surface to about 5mm thickness.

Cut out small rounds using a cookie cutter.

Place cookies on the prepared baking sheets.

Bake for 10-12 minutes, or until golden brown around the edges.

Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
