- Dark Chocolate (chopped)100g
- Hazelnut Extract1 tsp
- Heavy Cream500ml
- Toasted Hazelnuts (chopped)100g
- Cocoa Powderfor dusting

Bake puff pastry: Bake two sheets of puff pastry until golden and crisp. Let cool.

Make chocolate custard: Heat milk. Whisk egg yolks with sugar. Whisk in cornstarch. Temper with hot milk, return to heat, and cook until thickened. Remove from heat, stir in chopped dark chocolate until melted and smooth. Stir in hazelnut extract. Let cool slightly.

Whip cream with hazelnuts: Whip heavy cream until stiff peaks form. Gently fold in most of the chopped toasted hazelnuts.

Assemble: Place one pastry sheet on a platter. Spread the chocolate custard. Top with the hazelnut whipped cream. Place the second pastry sheet on top.

Chill: Refrigerate for at least 3 hours.

Serve: Dust with cocoa powder and remaining chopped hazelnuts before slicing.
