A quicker, simplified version of the traditional Rapska Torta, using pre-made puff pastry for the crust and a more accessible almond filling. This version captures the essence of the original with less effort.

- almond extract1/4 tsp
- powdered sugarfor dusting

Preheat oven to 200°C (400°F).

Thaw puff pastry according to package directions. Line a 22cm (8.5 inch) round tart pan with one sheet of puff pastry, pressing it into the base and up the sides. Trim excess.

For the filling: Whisk egg whites with a pinch of salt until frothy. Gradually add granulated sugar and whisk until stiff peaks form. Gently fold in ground almonds, lemon zest, and almond extract.

Spread the almond filling evenly over the puff pastry base.

Cut the second sheet of puff pastry into thin strips and arrange in a lattice pattern over the filling.

Bake for 25-30 minutes, or until the pastry is golden brown and puffed.
