A simplified version of Torta Makarana, using pre-made sponge cake and a quicker chocolate ganache for the filling and glaze, making it more accessible for a weeknight treat.

- Pre-made sponge cake roll1 large
- Dark chocolate chips300 g
- Heavy cream300 ml
- Butter50 g
- Rum or rum extract50 ml
- Powdered sugar2 tbsp

Slice the sponge cake roll into 3 even layers.

Prepare the chocolate ganache: Heat 200ml heavy cream until simmering. Pour over 200g dark chocolate chips. Let sit for 5 minutes, then stir until smooth. Stir in 50g butter.

Mix 50ml rum with 50ml water and 2 tbsp powdered sugar for the syrup.

Assemble the cake: Brush the bottom layer with syrup. Spread 1/3 of the ganache. Repeat with the second layer.

Place the top layer and brush with syrup.

Prepare the glaze: Gently reheat the remaining 100ml heavy cream. Pour over the remaining 100g dark chocolate chips. Stir until smooth.

Pour the glaze over the cake, covering the top and sides. Let set.

Chill for at least 1 hour before serving.
