
Classic Fanjki (Fanky)

Traditional Slovenian Fanjki, also known as Fanky, are delicate, fried, ribbon-like pastries often dusted with powdered sugar. They are a festive treat, especially popular during carnival season.

Sastojci
- All-purpose flour300 g

- Granulated sugar1 tbsp
- Salt1/4 tsp
- Vegetable oil for frying500 ml
- Powdered sugar for dusting50 g
- Lemon zest1 tsp

In a large bowl, whisk together flour, granulated sugar, and salt.

In a separate bowl, beat the eggs and lemon zest.

Gradually add the wet ingredients to the dry ingredients, mixing until a firm dough forms. Knead on a lightly floured surface for about 5-7 minutes until smooth.

Cover the dough with plastic wrap and let it rest for 20 minutes.

Divide the dough into 2-3 portions. Roll out each portion very thinly (about 1-2 mm thick) on a floured surface.

Cut the dough into thin strips, about 1.5 cm wide and 15-20 cm long.

Heat the vegetable oil in a deep pot or fryer to 170°C (340°F).

Carefully fry the dough strips in batches until golden brown and puffed, about 1-2 minutes per side. Use tongs to turn them.

Remove the fried Fanjki with a slotted spoon and place them on paper towels to drain excess oil.

While still warm, generously dust with powdered sugar.
