  • Fresh or frozen cod fillets600g
  • Onions500g
  • Garlic3 cloves
  • Tomatoes (canned diced)400g
  • White wine100ml
  • Olive oil50ml
  • Parsleyhalf bunch
  • Bay leaf1 leaf
  • Saltto taste
  • Black pepperto taste
  • Water100ml

    Cut the cod fillets into large chunks. If using frozen, thaw completely.

    In a pot, heat olive oil over medium heat. Sauté thinly sliced onions until softened, about 10-15 minutes.

    Add minced garlic and cook for 30 seconds.

    Add the canned diced tomatoes, white wine, bay leaf, and 100ml of water. Bring to a simmer.

    Gently place the cod chunks into the simmering sauce. Cover and cook for 15-20 minutes, or until the cod is cooked through and flakes easily. Avoid over-stirring to keep the fish pieces intact.

    Season with salt and black pepper to taste. Remove bay leaf.

    Stir in chopped fresh parsley.

    Serve immediately, perhaps with crusty bread.
