
Classic Bakalar na Crveno (Cod in Red Sauce)

A traditional Dalmatian dish featuring dried salted cod simmered in a rich tomato and onion sauce, seasoned with garlic and herbs. This is the quintessential 'bakalar na crveno'.

- Dried salted cod (bakalar)500g
- Olive oil100ml
- Onions3 large
- Garlic4 cloves
- Tomatoes (canned crushed or passata)800g
- White wine150ml
- Parsley1 bunch
- Saltto taste
- Black pepperto taste

Soak the dried cod in cold water for 24-48 hours, changing the water several times. Drain and cut into serving pieces.

In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onions and sauté until softened and translucent, about 10-15 minutes.

Add minced garlic and cook for another minute until fragrant.

Add the crushed tomatoes (or passata) and white wine. Stir well.

Bring the sauce to a simmer, then gently place the cod pieces into the sauce. Ensure they are mostly submerged.

Cover the pot and simmer gently for 30-45 minutes, or until the cod is cooked through and flakes easily. Add a little water if the sauce becomes too thick.

Season with salt and freshly ground black pepper to taste. Stir in chopped fresh parsley just before serving.
