- Olive oil50ml
- Onion1 large
- Garlic3 cloves
- Tomato passata500g
- Vegetable broth100ml
- Dried oregano1 tsp
- Fresh parsleysmall bunch
- Saltto taste
- Black pepperto taste

Cut the cod fillets into large chunks. Season with salt and pepper.

Finely chop the onion and mince the garlic.

Heat olive oil in a large skillet over medium-high heat. Sear the cod chunks for 1-2 minutes per side until lightly golden. Remove cod from skillet and set aside.

In the same skillet, reduce heat to medium. Add the chopped onion and sauté until softened, about 5 minutes.

Add minced garlic and oregano, cook for 30 seconds until fragrant.

Pour in the tomato passata and vegetable broth. Stir to combine and bring to a simmer.

Return the cod chunks to the skillet, nestling them into the sauce. Cover and simmer gently for 10-15 minutes, or until the cod is cooked through.

Stir in chopped fresh parsley. Season with salt and pepper to taste.
