- Fresh cod fillets600g
- Pre-cooked potatoes (boiled or roasted)800g
- Onions2 medium
- Garlic3 cloves
- Olive oil100ml
- White wine50ml
- Parsley1/2 bunch
- Saltto taste
- Black pepperto taste

Cut the fresh cod fillets into bite-sized pieces. Season with salt and pepper.

Peel and thinly slice the onions. Mince the garlic.

Heat olive oil in a large skillet over medium heat. Add onions and sauté until softened, about 5-7 minutes. Add garlic and cook for another minute until fragrant.

Add the cod pieces to the skillet and cook for 2-3 minutes per side, until lightly golden. Pour in the white wine and let it reduce slightly.

Add the pre-cooked potatoes to the skillet. Gently toss everything together to coat the potatoes and cod with the pan juices. Cook for another 5 minutes, allowing the flavors to meld.

Stir in chopped parsley. Check seasoning and adjust if necessary. Serve immediately.
