A traditional preparation of whole sea bream grilled over an open flame, seasoned simply to highlight the fish's natural flavor. This method results in a tender, flaky interior and a slightly smoky, crispy skin.

- Olive Oil4 tbsp
- Fresh Rosemary4 sprigs
- Lemon2, cut into wedges
- Saltto taste
- Black Pepperto taste

Clean and scale the sea bream. Make 2-3 diagonal scores on each side of the fish.

Season the inside and outside of each fish generously with salt and black pepper.

Stuff each cavity with a sprig of fresh rosemary.

Preheat your grill to medium-high heat. Clean the grill grates.

Brush the fish lightly with olive oil.

Place the fish on the hot grill. Grill for about 5-7 minutes per side, depending on the thickness of the fish, until the skin is crispy and the flesh is cooked through and flakes easily.
