Clean and gut the mackerel. Make shallow cuts on both sides.

In a small bowl, mix minced garlic, chopped parsley, 2 tablespoons of olive oil, salt, and pepper.

Rub the garlic-herb mixture all over the fish, inside and out, and stuff some into the cuts.

Preheat grill to medium-high heat. Oil the grates.

Grill the mackerel for about 5-7 minutes per side, until cooked through and nicely charred.
