Place the fish fillets in a wide pan or pot.

Pour in enough cold water to just cover the fish.

Bring the water to a gentle simmer over medium heat. Do not boil vigorously.

Poach the fish for 8-12 minutes, depending on thickness, until it is opaque and flakes easily with a fork.
