- Sugar2 tbsp
- Lemon zest1/4 tsp
- Vanilla extract1/2 tsp
- Vegetable oil for fryingas needed
- Powdered sugar for dustingas needed

Thaw puff pastry sheets according to package instructions.

For the filling: Mix ricotta cheese, egg yolk, sugar, lemon zest, and vanilla extract until smooth.

Unroll puff pastry and cut into squares or circles.

Place a teaspoon of filling onto one half of each pastry piece.

Fold the other half over the filling and press edges to seal, creating a crescent or half-moon shape. Crimp edges with a fork.
