- Onion1 medium

- Smoked pork (e.g., pancetta or smoked bacon)150 g

Wash and chop the Swiss chard, separating stems from leaves.

Peel and dice the potatoes and carrots.

Finely chop the onion and garlic. Dice the smoked pork.

In a large pot, heat olive oil over medium heat. Add the diced smoked pork and cook until slightly crispy.

Remove the pork with a slotted spoon, leaving the rendered fat in the pot. Sauté the chopped onion in the fat until translucent.

Add the chopped garlic and sauté for another minute.

Add the Swiss chard stems, diced potatoes, and carrots to the pot. Stir well.

Pour in enough water to cover the vegetables. Season with salt and black pepper.

Bring to a boil, then reduce heat, cover, and simmer for 30-40 minutes, or until vegetables are tender.

Add the Swiss chard leaves and the cooked smoked pork during the last 10-15 minutes of cooking.
