- store-bought shortbread cookie dough1 roll (approx. 300g)
- finely chopped walnuts100g
- sugar2 tbsp
- ground cinnamon1/2 tsp
- egg white1
- saltpinch

Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.

In a small bowl, mix chopped walnuts, sugar, cinnamon, and a pinch of salt.

In another small bowl, lightly whisk the egg white.

Unroll the cookie dough. Cut it into small portions. Flatten each portion slightly.

Place a small amount of the walnut mixture in the center of each flattened dough piece. Fold the dough around the filling to create small log shapes, sealing the edges.

Brush the tops of the cookies lightly with the whisked egg white.

Place the cookies on the prepared baking sheet.

Bake for 10-12 minutes, or until golden brown.

Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
