- Fish stock or water700ml
- Mussels (optional)200g

Soak the dried salted cod in cold water for at least 24-48 hours, changing the water several times. Drain and cut into bite-sized pieces.

Finely chop the onions and mince the garlic.

In a large pot or deep pan, heat olive oil over medium heat. Add onions and sauté until translucent, about 8-10 minutes.

Add minced garlic and cook for 1 minute.

Add the cod pieces and sear lightly for a couple of minutes.

Pour in the white wine and let it evaporate slightly.

Add the crushed tomatoes, fish stock, bay leaf. Bring to a simmer.

If using mussels, add them now. Cover and simmer for 20-25 minutes, or until the cod is cooked and flakes easily, and mussels have opened.

Remove the bay leaf. Season with salt and pepper to taste. Discard any unopened mussels.

Serve hot, drizzled with olive oil and garnished with fresh parsley.
