Roast the red bell peppers and eggplant until skin is charred and flesh is soft. Cool, peel, and deseed the peppers.

Roughly chop the roasted vegetables.

Mince the garlic and finely chop the fresh red chilies (adjust quantity for desired heat).

In a pot, combine the chopped vegetables, garlic, chilies, sunflower oil, and red wine vinegar.

Stir in the smoked paprika.

Cook over medium-low heat, stirring frequently, for about 45-75 minutes until thickened and flavors have melded. The smoked paprika will deepen the color and flavor.
