- Dried white beans (e.g., Great Northern)300g
- Smoked white fish (e.g., Cod, Haddock)200g
- Onion1 medium
- Leek (white part)1
- Garlic2 cloves
- Celery stalk1
- Vegetable broth700ml
- White wine (optional)100ml
- Fresh dill2 tbsp, chopped
- Olive oil2 tbsp
- Saltto taste
- Black pepperto taste

Soak the dried beans in cold water overnight. Drain and rinse.

In a pot, combine the soaked beans with vegetable broth. Bring to a boil, then reduce heat and simmer for about 1 hour, or until beans are almost tender.

While beans are simmering, finely chop the onion, leek, garlic, and celery.

Heat olive oil in a separate pan. Sauté the onion, leek, and celery until softened, about 8-10 minutes.

Add the garlic and cook for 1 minute more. If using, deglaze with white wine and let it reduce.

Add the sautéed vegetables to the pot with the beans. Season with salt and pepper.

Gently flake the smoked fish into large pieces. Add the fish to the pot during the last 15 minutes of cooking.

Simmer gently until the fish is heated through and the beans are fully tender. Be careful not to break up the fish too much.

Stir in most of the chopped dill. Adjust seasoning. Garnish with remaining dill before serving.
