- Vegetable broth1 liter
- Bay leaf1
- Saltto taste

- Fresh chivesfor garnish
- Plant-based cream (optional)for garnish

Soak dried peas overnight. Rinse lentils.

Finely chop leek, carrot, celery, and garlic.

In a large pot, heat olive oil. Sauté leek, carrot, and celery until softened, about 8-10 minutes. Add garlic and cook for 1 minute more.

Add the soaked and drained peas, rinsed lentils, vegetable broth, and bay leaf to the pot. Bring to a boil.

Reduce heat, cover, and simmer for 45-60 minutes, or until peas and lentils are tender. Stir occasionally and add more broth if needed.

Remove the bay leaf. Season with salt and black pepper to taste. The stew should be thick; if too thin, simmer uncovered for a few more minutes.

Serve hot, garnished with fresh chives and a swirl of plant-based cream if desired.
