- Onion1 large
- Carrots2 medium
- Garlic2 cloves
- Smoked paprika1 tsp
- Vegetable oil or lard2 tbsp
- Bay leaf1
- Saltto taste
- Black pepperto taste
- Water or vegetable broth1 liter

Rinse the lentils thoroughly under cold water.

Finely chop the onion, dice the carrots, and mince the garlic.

Heat the oil or lard in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.

Add the diced carrots and minced garlic to the pot. Cook for another 3-5 minutes until fragrant.

Stir in the smoked paprika and cook for 30 seconds, stirring constantly, until fragrant.

Add the rinsed lentils, bay leaf, salt, and pepper to the pot. Pour in the water or vegetable broth.

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 40-50 minutes, or until the lentils are tender. Stir occasionally and add more liquid if needed.

Remove the bay leaf before serving. Adjust seasoning with salt and pepper if necessary.

Serve hot, optionally with a drizzle of olive oil or a dollop of sour cream.
