- Cooked ham slices8 thin
- Gouda or Swiss cheese slices8 thin
- All-purpose flour1 cup
- Eggs2 large
- Breadcrumbs2 cups
- Vegetable oil or lard for frying4 cups

Pound the veal or pork cutlets to about 1/4 inch thickness. Season both sides with salt and pepper.

Place two slices of ham and two slices of cheese on one half of each cutlet. Fold the other half over to enclose the filling, pressing the edges to seal.

Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.

Dredge each stuffed cutlet first in flour, then dip in beaten eggs, and finally coat thoroughly with breadcrumbs, ensuring a good seal.

Heat the oil or lard in a deep pan or pot to 350°F (175°C).

Carefully fry the breaded cutlets in batches for about 4-6 minutes per side, or until golden brown and the cheese is melted and gooey.
