  • Breadcrumbs50 g
  • Chicken broth50 ml

  • Olive oil1 tbsp
  • Saltto taste

    Preheat oven to 180°C (350°F).

    Butterfly the pork tenderloin as described in the classic recipe. Season with salt and pepper.

    In a skillet, cook diced bacon until crisp. Remove bacon, leaving drippings in the pan. Sauté onions in bacon drippings until softened, then add mushrooms and garlic and cook until tender.

    Add breadcrumbs and chicken broth to the mushroom mixture. Stir well. Mix in the cooked bacon. Season with salt and pepper.

    Spread the mushroom-bacon stuffing over the butterflied pork tenderloin. Roll up tightly and secure with twine.

    Heat olive oil and butter in an oven-safe skillet over medium-high heat. Sear the pork roll on all sides until golden brown.
