- Butter40g
- Olive oil2 tbsp
- Mushrooms, sliced200g
- Shallots, finely chopped1
- Green peppercorns, drained2 tbsp
- Cognac or brandy30ml
- Beef broth150ml
- Heavy cream100ml
- Saltto taste
- Black pepperto taste
- Fresh chives, chopped (for garnish)1 tbsp

Season steaks with salt and pepper. Heat 1 tbsp olive oil and 1 tbsp butter in a skillet over medium-high heat. Sear steaks to desired doneness, then remove and rest.

Add remaining olive oil and butter to the skillet. Add sliced mushrooms and cook until browned and tender, about 5-7 minutes.

Add chopped shallots and cook for 2 minutes until softened. Add green peppercorns.

Pour in cognac/brandy and deglaze the pan, scraping up browned bits. Let it reduce slightly.

Add beef broth and simmer for 5 minutes to reduce slightly.

Stir in heavy cream and simmer until the sauce thickens. Season with salt and pepper.
