Classic Dalmatian cod fritters, crispy on the outside and tender on the inside, made with salt cod, potatoes, garlic, and parsley. A beloved appetizer or main course.

Soak the salt cod in cold water for 24-48 hours, changing the water several times. Drain and remove skin and bones. Boil the cod until tender, then flake it into small pieces.

Boil the potatoes until tender, then mash them finely.

Finely chop the garlic and parsley.

In a bowl, combine the flaked cod, mashed potatoes, chopped garlic, chopped parsley, eggs, and flour. Season with salt and pepper. Mix well to form a cohesive mixture.

Shape the mixture into small, oval fritters (polpete).

Heat a generous amount of olive oil in a frying pan over medium-high heat.

Fry the fritters in batches until golden brown and crispy on all sides. Drain on paper towels.
