- Curry powder (Indonesian style)2 tbsp
- Lemongrass1 stalk
- Kaffir lime leaves2

- Vegetable oil1 tbsp
- Fried shallots (for garnish)optional

Cut young jackfruit into bite-sized pieces. Boil until tender, then drain.

Finely chop shallots, garlic, and red chilies, or use a food processor.

Heat oil in a pot. Sauté the chopped aromatics and bruised lemongrass until fragrant.

Add the curry powder and stir for a minute until aromatic.

Add the boiled jackfruit and stir to coat. Pour in coconut milk and water. Add kaffir lime leaves.

Bring to a simmer and cook for 15-20 minutes, stirring occasionally, until the jackfruit is tender and the sauce has thickened.

Season with salt to taste. Garnish with fried shallots if desired. Serve hot.
