- Catfish (Ikan Patin)400g, cut into chunks
- Young jackfruit (nangka muda)200g, boiled and cut into bite-sized pieces
- Tempoyak (fermented durian paste)120g
- Coconut milk400ml
- Shallots7, sliced
- Garlic4 cloves, sliced
- Ginger1 inch, sliced
- Lemongrass1 stalk, bruised
- Turmeric leaf2 leaves, torn
- Chili padi5-8, or to taste
- Turmeric powder1 tsp
- Belacan (shrimp paste)1/2 tsp, optional
- Saltto taste
- Water200ml
- Vegetable oil2 tbsp

Prepare the spice paste: Blend shallots, garlic, ginger, turmeric powder, and belacan (if using) into a smooth paste.

Heat vegetable oil in a pot over medium heat. Sauté the spice paste until fragrant.

Add the tempoyak, bruised lemongrass, torn turmeric leaves, and chili padi. Cook for 5 minutes, stirring.

Pour in the coconut milk and water. Bring to a gentle simmer, stirring constantly.

Add the boiled young jackfruit pieces and catfish chunks. Simmer gently for 20-25 minutes, or until the fish is cooked and the jackfruit is tender.
