- pre-made sambal paste4-5 tbsp
- lime juice1 tbsp
- sugar1 tsp
- saltto taste
- vegetable oil2 tbsp
- sliced red chiliesfor garnish
- spring onionsfor garnish

Clean the Cencaru fish and make deep scores on both sides. Mix pre-made sambal paste with lime juice, sugar, and salt.

Stuff the sambal mixture into the cavity and scores of each fish.

Heat vegetable oil in a non-stick skillet over medium-high heat. Pan-fry the stuffed fish for about 6-8 minutes per side, until cooked through and golden brown.
