- Mackerel fillets500g
- Tamarind paste50g
- Dried chilies15-20
- Shallots150g
- Garlic5 cloves
- Ginger1 inch
- Galangal1 inch
- Turmeric1 inch
- Lemongrass2 stalks
- Belacan (shrimp paste)1 tsp
- Tomatoes2 medium
- Okra100g
- Asam keping (dried tamarind slices)3-4
- Water500ml
- Saltto taste
- Vegetable oil3 tbsp

Soak dried chilies in hot water until softened, then drain. Blend chilies, shallots, garlic, ginger, galangal, turmeric, lemongrass, and belacan into a paste.

Heat oil in a pot. Sauté the blended paste until fragrant and oil separates.

Add tamarind paste and water. Stir well and bring to a simmer.

Add mackerel fillets and asam keping. Simmer gently for about 10-15 minutes, or until fish is cooked through.

Add tomatoes and okra. Cook for another 5 minutes until okra is tender-crisp.

Season with salt to taste. Serve hot.
