  • pre-made sambal oelek or chili paste4 tbsp
  • garlic cloves, minced2
  • shallots, thinly sliced2
  • tamarind paste1 tbsp
  • sugar1 tsp
  • saltto taste
  • vegetable oil2 tbsp
  • water30 ml
  • red chilies, sliced (for garnish)1

    Clean the clams thoroughly.

    Heat vegetable oil in a wok or pan over medium heat. Sauté minced garlic and sliced shallots until fragrant.

    Add the sambal oelek and stir-fry for 1 minute.

    Stir in tamarind paste, sugar, and salt. Add water and bring to a simmer.

    Add the cleaned clams to the wok. Stir to coat.

    Cover and cook for 5-7 minutes, or until clams are open. Discard unopened clams.

    Garnish with sliced red chilies. Serve immediately.
