Bahan
- Tempoyak (fermented durian)200g
- Red chilies150g
- Shallots100g
- Garlic50g
- Belacan (shrimp paste)1 tsp
- Saltto taste
- Sugar1 tsp
- Lime juice1 tbsp

Rinse the tempoyak gently with a little water to remove excess liquid.

Blend or pound the red chilies, shallots, and garlic into a rough paste.

Toast the belacan briefly until fragrant.

Heat a little oil in a pan (optional, for a cooked sambal). Add the chili paste and cook until oil separates.

Add the tempoyak and toasted belacan to the pan. Stir well.

Cook over medium-low heat, stirring occasionally, until the sambal thickens and the flavors meld. This can take 20-30 minutes.

Season with salt and sugar to taste. Add lime juice just before serving.
