- Squid500g, cleaned and cut into rings
- Fresh Turmeric2 inches, grated or finely chopped
- Shallots3, thinly sliced
- Garlic3 cloves, minced
- Red Chilies2-3, sliced (adjust to spice preference)
- Ginger1 inch, grated
- Lemongrass1 stalk, bruised
- Curry Leaves1 sprig
- Vegetable Oil2 tbsp
- Saltto taste
- Black Pepperto taste
- Water2 tbsp (optional, for sauce consistency)

Prepare the squid by cleaning and cutting it into rings. Pat dry.

In a bowl, combine the grated turmeric, minced garlic, grated ginger, and sliced shallots to form a paste.

Heat vegetable oil in a wok or large skillet over medium-high heat.

Add the turmeric paste, bruised lemongrass, and curry leaves. Stir-fry until fragrant, about 1-2 minutes.

Add the squid rings and sliced red chilies to the wok. Stir-fry quickly until the squid is just cooked through and opaque, about 2-3 minutes. Do not overcook.

Season with salt and black pepper to taste. Add a splash of water if a saucier consistency is desired.
