  • Cooking oil3 tbsp
  • Water2 tbsp
  • Onion (sliced)1/2
  • Cilantro (for garnish)a few sprigs

    Clean and cut the squid into rings. Marinate with a pinch of salt and black pepper.

    Prepare the sambal paste: Blend shallots, garlic, fresh red chilies, soaked dried chilies, and belacan until smooth.

    Heat cooking oil in a wok or pan over medium-high heat. Add the sambal paste and stir-fry until fragrant and the oil separates.

    Add tamarind paste, sugar, and salt. Stir well.

    Add the squid rings and water. Stir-fry quickly until the squid is just cooked through and coated in the sauce. Do not overcook.
