- Beef (shank or stewing beef), cut into cubes400g
- Young jackfruit, boiled and cubed300g
- Coconut milk (thick)350ml
- Coconut cream100ml
- Dried chilies, soaked and deseeded12-15
- Shallots, peeled6-8
- Garlic cloves3-4
- Galangal, sliced1.5cm piece
- Turmeric, fresh, sliced0.5cm piece
- Lemongrass, bruised1 stalk
- Turmeric leaves, torn1 leaf
- Saltto taste
- Water150ml
- Vegetable oil2 tbsp

Blend soaked dried chilies, shallots, garlic, galangal, and fresh turmeric into a smooth paste.

Heat vegetable oil in a pot over medium heat. Sauté the blended paste until fragrant.

Add the beef cubes and stir-fry until browned.

Add the boiled and cubed young jackfruit, coconut milk, coconut cream, and water. Stir in the bruised lemongrass and torn turmeric leaf.

Bring to a simmer, then reduce heat to low. Cover and cook for 60-75 minutes, or until the beef is tender and the gravy has thickened.

Season with salt to taste. Simmer for another 5 minutes. Serve hot.
