- Smoked Beef (Daging Salai)500g
- Coconut Milk400ml
- Shallots100g
- Garlic4 cloves
- Ginger1 cm
- Bird's Eye Chilies (Cili Padi)8-12
- Dried Chilies5
- Lemongrass1 stalk
- Turmeric Leaf1
- Assam Gelugur1 piece
- Saltto taste
- Water100ml

Soak dried chilies in hot water until softened, then drain. Deseed if preferred for less heat.

Blend shallots, garlic, ginger, bird's eye chilies, and soaked dried chilies into a paste.

Bruise the lemongrass stalk.

Heat a pot and sauté the blended spice paste with bruised lemongrass until fragrant and oil separates.

Add the smoked beef and stir-fry for a few minutes.

Pour in coconut milk and water. Add Assam Gelugur.

Bring to a simmer and cook for 30-40 minutes, or until the beef is tender and the gravy thickens.

Tear the turmeric leaf and add it to the pot. Simmer for another 5 minutes.
