    Slice beef thinly against the grain. Marinate with 1 tbsp soy sauce, 1 tsp cornstarch, salt, and pepper for 15 minutes.

    Chop onion and bell peppers into bite-sized pieces. Mince garlic and ginger.

    In a small bowl, mix remaining soy sauce, oyster sauce, sugar, remaining cornstarch, and water to create the sauce.

    Heat 2 tbsp oil in a wok or large skillet over high heat. Add marinated beef and stir-fry until browned. Remove beef and set aside.

    Add remaining 1 tbsp oil to the wok. Add garlic and ginger, stir-fry until fragrant. Add onions and stir-fry until slightly softened.

    Add bell peppers and stir-fry for 2-3 minutes until crisp-tender.

    Return beef to the wok. Pour in the sauce mixture and stir continuously until the sauce thickens and coats the ingredients.
