    Slice beef thinly against the grain. In a bowl, marinate beef with 2 tbsp soy sauce, 1 tbsp oyster sauce, dark soy sauce, sugar, sesame oil, cornstarch, salt, and pepper. Let it sit for at least 15 minutes.

    Heat vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and sliced chili padi (if using), stir-fry until fragrant.

    Add the julienned ginger and stir-fry for another minute until aromatic.

    Add the marinated beef to the wok. Stir-fry quickly, breaking up any clumps, until the beef is browned and almost cooked through.

    Pour in the remaining 2 tbsp soy sauce and 1 tbsp oyster sauce. Add water and bring to a simmer. Cook for 2-3 minutes, or until the sauce thickens and coats the beef.
