- Beef cubes (shank or brisket)300 g
- Pre-made chili paste (sambal tumis)5 tbsp
- Shallots5
- Garlic cloves4
- Ginger1-inch piece
- Tomato paste2 tbsp
- Ketchup2 tbsp
- Soy sauce1 tbsp
- Sugar1 tsp
- Saltto taste
- Water1.5 liters
- Vegetable oil2 tbsp
- Potatoes1 large
- Carrots1 medium
- Spring onionsfor garnish
- Red chili slicesfor garnish

Finely chop shallots, garlic, and ginger. Sauté them in vegetable oil in a large pot until fragrant.

Add the pre-made chili paste and tomato paste. Cook for 3-5 minutes, stirring constantly.

Add the beef marrow bones and beef cubes. Sear for a few minutes.

Pour in the water and bring to a boil. Skim off any impurities.

Reduce heat, cover, and simmer for 45 minutes to 1 hour, until beef is tender.
