- Whole chicken, cut into pieces1 kg
- Water2 liters
- Ginger, sliced3 cm
- Garlic, crushed4 cloves
- Shallots, sliced5
- Lemongrass, bruised2 stalks
- Bay leaves3
- Star anise2
- Cinnamon stick1

- Carrots, chopped2
- Potatoes, cubed2
- Celery, chopped2 stalks
- Spring onions, chopped2
- Cilantro, choppeda handful

Boil the chicken pieces in water for about 10 minutes to remove impurities. Drain and rinse the chicken.

In a large pot, combine the rinsed chicken, fresh water, ginger, garlic, shallots, lemongrass, bay leaves, star anise, and cinnamon stick.

Bring to a boil, then reduce heat and simmer for at least 45 minutes, or until the chicken is tender and the broth is flavorful. Skim off any foam or impurities that rise to the surface.

Add carrots, potatoes, and celery to the pot. Continue to simmer for another 15-20 minutes, or until the vegetables are tender.
