- Beef broth1.5 liters
- Lemongrass stalks2 stalks
- Galangal1-inch piece
- Chili padi (bird's eye chilies)3-5
- Shallots3 medium
- Garlic4 cloves
- Turmeric powder1 tsp
- Saltto taste
- Black pepperto taste
- Mint leavesfor garnish

Clean and boil the beef stomach until tender (about 1.5-2 hours). Slice thinly.

Bruise the lemongrass stalks. Slice galangal thinly. Finely chop shallots and garlic. Deseed and finely chop chili padi (or adjust to spice preference).

In a pot, sauté the shallots, garlic, galangal, and bruised lemongrass until fragrant.

Add the chopped chili padi and turmeric powder. Stir for another minute.

Pour in the beef broth and bring to a simmer. Add the sliced beef stomach.

Simmer for at least 20-30 minutes, allowing the flavors to infuse. Season with salt and black pepper to taste.
