Marinate chicken thighs with salt and pepper.

Prepare the spice paste for frying: pound or blend lemongrass, galangal, turmeric, garlic, shallots, red chilies, bird's eye chilies, and shrimp paste until smooth.

Coat the marinated chicken thighs evenly with rice flour.

Heat a generous amount of vegetable oil in a wok or deep pan over medium-high heat. Fry the coated chicken until golden brown and crispy. Drain and set aside.

Prepare the sambal: in a mortar and pestle, pound together red chilies, bird's eye chilies, garlic, shallots, and shrimp paste. Add salt to taste.

Heat 2-3 tablespoons of oil in a small pan. Briefly fry the pounded sambal mixture for about 1-2 minutes until fragrant. Stir in lime juice.

Place the fried chicken pieces on a cutting board. Smash them gently using a mortar and pestle or the flat side of a cleaver, breaking them slightly but not into pieces.

Pour the prepared sambal over the smashed chicken and mix well to coat.

Serve the Nasi Ayam Gepuk immediately with steamed rice, cucumber slices, and cilantro garnish.
