- Coconut milk400 ml
- Water200 ml
- Lemongrass1 stalk, bruised
- Galangal2 cm, bruised
- Kaffir lime leaves2 leaves
- Turmeric powder1 tsp
- Chili paste (sambal)1 tbsp
- Shallots5, thinly sliced
- Garlic3 cloves, minced
- Shrimp paste (terasi)1/2 tsp
- Young green jackfruit200 g, canned or fresh, cut into chunks
- Tempeh200 g, cubed
- Long beans100 g, cut into 2-inch pieces
- Eggplant1/2 medium, cubed
- Saltto taste
- Sugar1 tsp
- Vegetable oil2 tbsp

Sauté shallots and garlic in vegetable oil until fragrant.
