- Squid150g
- Mussels150g
- Mushrooms (straw or oyster)100g
- Lemongrass2 stalks
- Galangal3 slices
- Kaffir lime leaves4 leaves
- Thai chilies2-3
- Lime juice3 tbsp
- Fish sauce2 tbsp
- Water1 liter
- Saltto taste
- Cilantrofor garnish

Bruise lemongrass stalks and slice galangal. Lightly crush Thai chilies.

In a pot, bring water to a boil. Add lemongrass, galangal, and kaffir lime leaves. Simmer for 10 minutes to infuse the broth.

Add mushrooms and chilies to the pot. Cook for 2-3 minutes.

Add shrimp, squid, and mussels. Cook until seafood is just cooked through (shrimp turn pink, squid opaque, mussels open).

Stir in lime juice and fish sauce. Season with salt if needed.
