- Shrimp250g
- Water1 liter
- Lemongrass stalks2 stalks
- Galangal slices5 slices
- Kaffir lime leaves5 leaves
- Thai bird's eye chilies3-5
- Mushrooms (straw or oyster)100g
- Fish sauce3 tbsp
- Lime juice2 tbsp
- Cilantroa handful
- Saltto taste

Bruise and cut lemongrass stalks into 2-inch pieces. Tear kaffir lime leaves.

In a pot, bring water to a boil. Add lemongrass, galangal, and kaffir lime leaves. Simmer for 5-7 minutes to infuse the broth.

Add shrimp and mushrooms to the pot. Cook until shrimp turn pink and opaque, about 3-5 minutes.

Stir in fish sauce and lime juice. Add crushed Thai bird's eye chilies to your desired spice level.

Taste and adjust seasoning with salt if needed. Do not boil after adding lime juice.

Serve hot, garnished with fresh cilantro and a lime wedge.
