Bahan
- Coconut milk400 ml
- Water200 ml
- Lemongrass1 stalk, bruised
- Galangal2 cm, bruised
- Kaffir lime leaves2 leaves
- Turmeric powder1 tsp
- Chili paste (sambal)1 tbsp
- Shallots5, thinly sliced
- Garlic3 cloves, minced
- Shrimp paste (terasi)1/2 tsp
- Long beans100 g, cut into 2-inch pieces
- Chayote1 medium, cubed
- Carrots1 medium, sliced
- Tofu100 g, cubed
- Tempeh100 g, cubed
- Saltto taste
- Sugar1 tsp
- Vegetable oil2 tbsp

Sauté shallots and garlic in vegetable oil until fragrant.

Add turmeric powder, chili paste, and shrimp paste. Cook for another minute.

Add lemongrass, galangal, and kaffir lime leaves. Stir well.

Pour in coconut milk and water. Bring to a simmer.

Add harder vegetables like carrots and chayote. Cook for 5 minutes.

Add long beans, tofu, and tempeh. Simmer until vegetables are tender.

Season with salt and sugar to taste. Adjust consistency with more water if needed.
